I am always trying to mix it up with dinner, whether I am cooking a fish filet, a chicken breast, or roasting a vegetable, I look to Pinterest for new inspiration from time to time and last week I came upon a great, simple, and tasty recipe to use on tilapia, courtesy of Rachel Ray Magazine. It's so easy - dip tilapia filets in olive oil, and then rub grated parmesan cheese and paprika over them, and bake. The fish takes on a gorgeous red hue and the taste is fabulous! I served it with herbed couscous and creamed spinach.
