I saw a video on Bon Appetit's Facebook page for cashew cauliflower soup and I made it a few days later. This soup is creamy and really tasty, especially with the topping made of buckwheat groats (had to go to Whole Foods for those!), paprika and lemon juice. Recipe here!
To accompany, I made avocado toast (how millennial!) on sourdough bread, topped with an egg. Yum!
