Apricot Cookies!

I love apricot jam - it's a little tart, and not overly sweet like strawberry or grape jams tend to be. I recently became a fan of Aussie mama and meal prep extraordinaire Keri-Ann Manly's Facebook page, Chaotically Organized! I started following her page last month, after reading this interesting article about her in the Daily Mail. Keri has a family of 7 and works hard at meal prepping and budgeting and has excellent recipes and tips on her page.

One of the recipes for jam thumbprint cookies, immediately caught my eye. The cookie part is more like a shortbread, and you make a small well in the middle (with your thumb!) to fill with any jam you like. These were crumbly and tasty - perfect with tea the next day!

Foundation Cookie Mix

Basic biscuit dough:
125gms of butter 
2 eggs
1/2 cup sugar
1 3/4 cup of self-raising flour 

Add eggs

Roll into balls, place on a tray a bake in medium oven until golden....

Make a hole in the centre of the ball - fill with your fav jam - I recommend plum! 

Cream butter and sugar. Slowly add flour until it comes together as a dough.
