Fall Baking!

Fall is my favorite season. Though we miss out on beautiful leaves changing color, it finally does cool down here in South Florida and there are a handful of days where we can legitimately wear scarves (closer to December/January).

My birthday, my husband's birthday, our dating anniversary, and our wedding anniversary are all within the next three months (not to mention Thanksgiving and Christmas!) so this is a special time for us and our family.

What better way to celebrate so much love, than with baking? And holiday flavors no less! I love breaking out that pumpkin!

Guinness Chocolate Cupcakes With Bailey's Cream Cheese Frosting!

These are definitely in my top three list of favorite cupcakes to make! My go-to recipe comes from Brown Eyed Baker's blog and it is easy and delicious (I do not use the whiskey ganache, however).

Although I would categorize these cupcakes as an 'autumn' recipe, nothing stops me from whipping up a batch in summertime.

Guinness stout, melted butter, and rich dark chocolate come together to form a moist cake that is not too dense and certainly not too sweet. Whipped Bailey's Irish cream and cream cheese make a frosting that is to die for. I highly recommend these!

Guiness Cupcakes with Bailey's Frosting!

These were made in honor of a special Irish-American friend's birthday - Guinness Chocolate Cupcakes with Bailey's Cream Cheese Buttercream Frosting! I adapted the recipe from Brown Eyed Baker, essentially just removing the whiskey ganache filling part. I topped the frosting with a dark chocolate espresso bean. Yum!

Happy St. Patrick's Day!

In honor of all things Irish, this year I made Guiness chocolate cupcakes with Bailey's cream cheese frosting. Recipe courtesy of Annie's Eats. Any dark stout complements chocolate so perfectly in a cupcake, and I was just as happy with the flavor of these as I was back on Halloween, when I made Pumpkin Ale Cupcakes. Yum!

Honey Beer Bread!

When I saw a recipe for golden, soft honey beer bread on Pinterest, my curiosity was instantly piqued. When I realized the recipe was coming from Gimme Some Oven, I bookmarked it to make, like ASAP. The ingredient list is short and sweet, and probably means you do not need to make a trip to the grocery store. The only beer my boyfriend had in our fridge was Guinness, so I went with it. Amazingly, the dark beer and light honey combined to make a very flavorful, fluffy loaf. I was blown away by the simplicity - 5 ingredients, no kneading, total time from start to finish was less than an hour. I highly recommend this for any carb lover out there! I would like to experiment with a lighter beer next time, maybe a pale ale, as the dark Guinness resulted in a slightly bitter aftertaste (which my family still seemed to enjoy).
