I have been enjoying cooking with spaghetti squash this year (see here and here), as the flavor and texture are both so good. My husband and toddler enjoy it too, and it's a fun and healthy alternative to traditional pasta.
I made it last weekend, in a recipe very similar to my previous Spaghetti Squash Alfredo With Chicken Sausage and Kale, but I substituted spinach for kale, and baked, diced chicken tenderloins for the chicken sausage. It was delicious - the creamy alfredo sauce perfectly complimented the sauteed spinach and chicken breast.
