One of the recipes for jam thumbprint cookies, immediately caught my eye. The cookie part is more like a shortbread, and you make a small well in the middle (with your thumb!) to fill with any jam you like. These were crumbly and tasty - perfect with tea the next day!

Basic biscuit dough:
125gms of butter
2 eggs
1/2 cup sugar
1 3/4 cup of self-raising flour
Add eggs
1/2 cup sugar
1 3/4 cup of self-raising flour
Add eggs
Roll into balls, place on a tray a bake in medium oven
until golden....
Make
a hole in the centre of the ball - fill with your fav jam - I recommend plum!
Cream butter and sugar. Slowly add flour until it
comes together as a dough.
