This recipe was SO easy. I used two ripe bananas, half a cup of unsweetened coconut flakes*, 1/4 cup of chia seeds, 1 tablespoon of honey (or maple syrup), two teaspoons of cinnamon, and a sprinkling of cocoa nibs. I put it all in the food processor and then scooped them out by the tablespoonful on a baking sheet with a silicone mat. I baked them at 350 degrees for 20 minutes, and they were perfect! Not too sweet, and very healthy and gluten free!
*It's important to use unsweetened coconut flakes instead of sweetened ones, to cut down on the sugar and sweetness of the recipe.
